Cascade US Alpha Acid 4.5-7.0% Pellet Hops
Cascade was bred in 1956 through a USDA program and first released in 1972. Its ancestry includes English Fuggle and Russian Serebrianka. Usage: The classic finishing hop for countless craft ales, Cascade’s unmistakable character is right at home in pale ales, blondes, wheats, IPAs, stouts, porters. Can serve as a soloist in single-hop formulations. Aroma & Flavor Characteristics: Famously citrus-like (particularly ruby red grapefruit) with prominent floral tones. Medium intensity.

Galaxy AU Alpha Acid 13.5-14.8% Pellet Hops
Origin: Australia. The preeminent Australian hop, Galaxy arose from breeding programs in the 1990s with ancestry that includes German Perle. It was released in 2009 and has seen very high demand ever since. Usage: Aroma and dry hop. Although it has adequate alpha content for bittering additions, Galaxy shines when used as an aroma and flavor hop - the later the better for flavor intensity. Its powerful tropical fruit character is at home as a feature in American pale and IPA, wheat beer, saison, and Brettanomyces-fermented beers. Aroma & Flavor Characteristics: Intense and potent. Musky tropical fruit (passionfruit, apricot, Key lime) with dank citrus and earthy blackcurrant.

Cluster Alpha Acid 6.0-9.0% Pellet Hops
Cluster Hops comes from, as they say, mass selection. This translates to varieties were likely transported from europe, potentially by the Dutch and English settlers, and after years of growing, hybridization, likely open pollination, a strong sample was chosen and given the name Cluster. Due to its history trail, and early use, it is believed to be one of the oldest American hops used en mass beer production. Cluster Hops is not grown in the capacity it once was, it has faced a similar fate as many varieties falling to the shadows of the super alpha varieties, and those with more disease tolerance. However, Cluster hops is still widely available, and makes a great dual purpose hops in homebrews and commercial beers. The alpha acid content of Cluster Hops is 5.0%-8.5%. The bitterness from this variety is not overwhelming, and is balanced with its floral flavor and aroma. Cluster Hops has fairly high myrcene oil content which definitely adds to this floral bouquet, which is a nice mix between earthy flavors and sweet fruits. Cluster hops isn't exceptionally well at producing large yields, and has a susceptibility to mildew. However, its storagability is near the top of the pack. It seems to be more used in heavier beers, such as Porter, Stouts and Barley Wines, but its flavor profile and bitterness ranking make it great for moderately light ales. If it is used in many beers, its not overly marketed. However you will find cluster used by notable craft brewers Beer Style:American Barley Wine,Porter,English Pale Ale,Amber Ale,Honey Ale,Cream Ale,Oatmeal Stout,Espresso Stout,Golden Ale,India Pale Ale,Lager

Pride of Ringwood AU Alpha Acid 9.5-10.5% Pellet Hops
Pride of Ringwood Hops is very much Australian. This hops variety was the highest alpha acid hop in the world when it was released in 1965. Other varieties such as Super Pride have taken over that recognition for the region. Bred from Pride of Kent and open pollination by the Carlton and United Breweries in Melbourne, Australia, Pride of Ringwood at one time occupied more than 90% of the hops production in Australia. This variety was once grown in Kashmir, India, and matures too late to be grown in the United States, and so it predominately sticks to its roots in the Commonwealth of Australia. Pride of Ringwood Hops is considered a bittering hops variety although it carries favorable aromatic qualities. The alpha acid content rings in at 7.0%-10.5% and is a dominating force in the Ales and Lager beers from the region. The aroma of Pride of Ringwood Hops can be described as having a spicy kick with essence of citrus and fruit-like tones. The aroma is strong yet delectable, and will be very noticeable in late additions in the wort. The continent of Australia has the benefit of being relatively disease free, but when grown elsewhere Pride of Ringwood Hops is susceptible to Downy Mildew, yet resistant to Verticillium Wilt. It is a moderately high yielding plant of moderately large tight cones. The harvest comes mid to late season after a somewhat vigorous growing cycle, and the storage of Pride of Ringwood is considered excellent. Possible substitutions include Galena and Cluster. This hops variety is found in the beers of large and small brewers in Australia. Beer Style: Amber Ale ,Lager,Fruit Lambic ,Pale Ale ,Australian Lager ,Strong Ale ,Golden Ale ,American Pale Ale

Amarillo US Alpha Acid 8.0-11.0% Pellet Hops

This particular variety is packed with citrus aroma and flavor making it a great dual purpose hops. The myrcene oil content within the cone is some of the highest, and this explains its grapefruit and orange flavor. This myrcene level can also contribute a metallic flavor to the beer if used in abundance. Virgil Gamache Farms Inc. introduced this grower's delight, that is tolerant to most common wilt and mildew diseases. Although it's yield is relatively low, VGXP01 hops is a fairly vigorous grower. VGXP01 hops are usually sold under the brand name AMARILLO® and is used in a number of commercial beers, showing that VGXP01 hops are applicable from American Wheat to Hoppy Reds. Centennial US Alpha Acid 9.5-11.5% Pellet Hops
Centennial Hops is a celebration of the gods in a medium compact cone form. Named after the Washington State festival sharing the same name, this variety was another brain child of the USDA. Once again, Brewer's Gold Hops was used along with Fuggle, East Kent Golding, Bavarian, and one other unknown variety to produce this dark yellow lupulin producer. Centennial Hops was first created in 1974 and boasts an alpha acid rating of 9.5%-11.5%. It is sometimes referred to as a Super Cascade, however it is lighter on the citrus aromas. Centennial works undoubtedly well in Pale Ales and India Pale Ales, where some bottom line bitterness in beer is needed with the top end aroma. The floral flavor and aroma of this variety is evident in many commercial beers. Centennial has seen a resurgence in both the beer making and hops growing industry. In its short life, it has seen rise and fall, and is now on an upswing. Its versatility in different beer styles, resistance to disease and fungus, and moderate storagability will keep Centennial in the American mainstream for some time to come. Willamette US Alpha Acid 4.0-6.0% Pellet Hops
Willamette Hops was named after the mighty river that pours through the Willamette Valley in Southern Washington and Northern Oregon. Willamette Hops was developed and released by the U.S.D.A in 1976 and has taken root on the craft brewing industry and accounts for about 20% of total U.S. hops acreage. Pow! Willamette Hops was a triploid seedling of Fuggle, which is a quintessential English variety that has shaped decades of beer brewing. Willamette Hops is an aroma variety with a low alpha acid content at 4.0%-6.0%. Although Willamette can contribute slightly to the bittering of a homebrew or craft beer, Willamette dominates its usage for its flavor and aroma. Of the oils in Willamette, myrcene (30.0%-55.0%), humulene (20.0%-30.0%), as well as farnesene (5.0%-6.0%) are all elevated above the norm. This results in a delicate peppery herbaceous spice that has both fruit and floral essence. yum. Since its introduction, Willamette Hops has been growing in demand as well as supply. It is one of the most common aroma hops used in the United States. And brewers that use it seem to use it a lot. Willamette Hops is on the low side of the yield range producing 1340-1700 lbs/acre. And the small to medium size cones are somewhat loose, which impacts harvesting. Palisade Hops is a product of the Yakima Chief Ranch in the north western United States. The name Palisades means a strong wooden fence, literally, and is a cross between Tettnanger, and an American hops variety via open pollination. Palisade Hops is also known as YCR-4 and marks yet another versatile hop variety from the Yakima Farm. The alpha acid content in Palisade ranges from 5.5%-9.5%, and has a co-humulone content at 24.0%-29.0%, which is somewhat low. Palisade Hops can be used in early kettle additions in the wort, and is going to perform well at later additions or during dry-hopping in the fermentor or keg. The myrcene oil content is rather low, however it does not take away from the herbal, grassy character. Palisade Hops is associated with sweet nectar fruits with hints of citrus. The bouquet will also a deliver a punch of floral perfume to the brew, likely something that is fairly aggressive on the hops. Palisade Hops is a strong grower that is high on the yield side at 2200-3000 lbs/acre. The medium cones are harvested mid-season from after growing with resistance to mildew and other diseases. From beer styles such as Goldens, to Lagers, to Imperials, Palisade Hops is worth some experimental brewing journeys.

Hallertauer Mittlefrueh Alpha Acid 3.0-5.5% Pellet Hops
Think Hallertau Hops and think Bavarian beers styles. The Hallertau variety once dominated the region from which it was named before being replaced by a Hersbrucker and other hallertau varieties which or more tolerant of wilt. Hallertau Hops has a very long history in German Lagers and its aromatic and flavor properties help to describe generations of beers from the area. Hallertau is an aromatic hops with an alpha acid rating at 3.5%-5.5%. This variety is considered a noble hops. This designation fits Tettnanger, Spalt, and Saaz as well, and refers to their high amounts of humulene, and low amounts of alpha acids. Also these varieties have high aromatic qualities. Hallertau itself has tempered yet spicy aroma. It is useful any time during the brewing process from kettle additions, but is more favorable for late additions or during dry hop. As mentioned Hallertau has susceptibility to German Wilt. This along with its low producing yields are some of the reasons that it does not flourish as it once did. However the Hallertau mark has been made on brewing and is not going to go away as it is still prided as Bavarian Style. There are many other Hallertau variations, not so much from this specific strain, but more from breeding programs in and around Germany. Some of these other varieties include Hallertaur Aroma, Hallertaur Magnum, Hallertaur Mittelfrüh, Hallertaur Taurus, Hallertaur Tradition, Pacific Hallertaur, and U.S. Hallertaur Hops. Wow, find a good lager recipe and start brewing.

Styrian Golding Alpha Acid 4.5-6.0% Pellet Hops
Styrian Golding Hops, also called Savinja Golding, is a traditional hops grown primarily in Slovenia, and also Austria; It is not of the Golding heritage, instead Styrian Golding is a form of Fuggle Hops and carries much of its attributes. This variety was the major hops crop for Styria (Austrian state bordering Slovenia) in the 1930's as powdery mildew made its impact on other varieties from the area. Styrian Golding Hops is an aroma variety that has a low alpha acid content of 4.5%-6.0%. This well established traditional variety offers a delicate bitterness with a distinctive flavor and aroma. The oils show moderate myrcene and caryophyllene levels. The humulene oil registers on the high side at 34.0%-38.0%, and helps provide for some of the spicy character of Styrian Golding. Farnesene oil also makes its mark, its low although present, and help to make this variety ideal for finishing additions. Styrian Golding Hops is versatile and is used throughout the world. It is an early yielding plant ranging from 1150-1500 lbs/acre which is good for a natural variety from the region. The medium compact cones are harvested early in the season, and Sytrian Golding comes equipped with natural resistance to downy mildew. This helped to shape its success in the last century. The Fuggle varieties, including those grown in the United States, are going to make a good substitutes if you have some on hand. However, Styrian Golding is available on the marketplace. Usage: Aroma. Styrian Goldings Celeia can be used for light bittering duty in a number of styles but shines as a late kettle or dry hop for English bitter and pale ale, mild, brown ale, as well as a wide array of Belgian styles. Aroma & Flavor Characteristics: Invitingly earthy and resinous as befits its Fuggle background, but with a more refined and restrained nature. When used in a hopback or as a dry hop, look for heightened floral and sweet spice.

Columbus US Alpha Acid 14.0-16.0% Pellet Hops
Columbus is one of the Three C's, including Centennial and Cascade. This variety also has other names including CTZ, which stands for Columbus, Tomahawk, and Zeus. Tomahawk is the exact same variety, while Zeus hops is so bitterly close that it gets lumped in. The naming struggle has to do with copyrights and patents between Yakima Chief, Inc, and Charles E. Zimmerman who originally produced the variety. This resulted in a joint venture going by the name of HUSA-CEZ, LLC between Charles and Hopunion USA. With the confusing history put aside, Columbus makes a great dual purpose hops in beer. It brings both a bitterness kick to the table as well as strong dreamy aroma. Columbus brings a 13%-16% alpha acid rating to the table, making it ideal for laying the bitter foundation for beers such as Pale Ales, India Pale Ales, Stouts, and anything Imperial. In the same capacity this variety is commonly used for late-boil or dry hopping for its herbal, earthy character. The aroma is pleasing and citrus notes may be found in fresh batches. The oil content within Columbus Hops is moderate, and the essential oils are relatively balanced. It is a moderate yielding plant edging towards the higher side, and is grown widely in the U.S. This variety produces medium to large compact cones, and the lupulin is on the paler side of yellow. Some of the most forward looking breweries in the U.S. are using Columbus to flavour their American Style Ales.

Vic Secret AU Alpha Acid 15.1-21.8% Pellet Hops
New to commercial production for 2013, Vic Secret has been seen in seasonal and collaboration brews since 2011. Whirlpool and dry hop additions of Vic Secret introduce appealing clean and distinct pineapple and pine characters to the beer. Lighter and less dominant than Galaxy, yet there is still more than enough character for Vic Secret to embellish the world of beer flavour. The clean, distinct, fruit and pine characters of Vic Secret are best accessed by dry hopping or whirlpool additions. Late kettle additions have been found to impart a pleasant earthy character, but little fruit. Very high levels of alpha acid may also mean that brewers will find it easier to craft the right balance in their beer by dry hopping. Vic Secret has been developed from a seedling created in Victoria in 2000. She actually shares the same mother and father as Topaz. She breezed through the selection program with strong growth and yield, until 2010 when the first brewing trials were conducted. Initial trial brewing was conducted with Vic Secret as a kettle addition late in the boil. Given the seductive aroma of the raw hops, the resulting pleasant earthy character was a little underwhelming. However, subsequent use of this hop in the 2011 Bridge Road Harvest green hop beer showed extraordinary clean passionfruit and pineapple flavours with a light background of herbs and piney resin. Further experimentation in Australia and overseas, has shown that whirlpool and dry hop additions result in the best flavour pickup from Vic Secret.

Super Pride AU Alpha Acid 13.5-15.0% Pellet Hops
Super Pride is a seedless, high alpha acid hop. Like its mother Pride of Ringwood, Super Pride is predominantly used as a bittering hop. Apart from bittering, the influence on beer aroma is a combination of resin and fruit, with a milder impact than that of Pride of Ringwood. With an esteemed family history, Super Pride was bred in 1987 by HPA at the Rostrevor Breeding Garden in Victoria from a cross of a female Pride of Ringwood and an Australian bred male. She was introduced to the world in 1995, offering similar brewing traits to Pride of Ringwood, but with a higher alpha acid content.Commercial production began in 1998. A superstar in her own right, Super Pride has been one of the major hop varieties grown by HPA since 2002 and to this day is used for the bulk of bittering needs in Australian brewed lager.

Topaz AU Alpha Acid 16.2-20.1% Pellet Hops
Topaz™ was an undiscovered gem for some time. A child of the 80s, born in the pursuit of high yields of alpha acid, the progeny was a big robust plant with a superb aroma, grown commercially for many years purely for alpha acid production. However she really started to shine at trade shows during 2007 and 2008, where brewing experts and novices alike were drawn to her superb aroma and consistently rated Topaz™ top-hop. Topaz™ was then presented to brewers for further assessment as a late and/or dry hop addition and from that point on, the flavour Topaz™ was increasingly found in beers around the world. Her hop ancestry heralds from an existing Australian high alpha acid variety crossed with pollen from a Wye college male – which provided an interesting mix of English, continental European and north American heritage. Typical Beer Styles: American pale, amber, IPA Possible Substitutions: Citra, Galaxy, Cascade, Riwaka, Rakau, Amarillo and the like

Helga AU Alpha Acid 5.4-7.3% Pellet Hops
Helga is a true Australian aroma hop with a German accent, She was developed in Australia from the noble German cultivar Hallertau Mittelfrueh. Helga’s delicate floral and subtle herbal aroma is an excellent companion to stronger malt driven ales and lagers. Whether used for bittering, flavour or aroma, in the kettle, in the whirlpool or dry hopping, Helga has a forgiving character, which will reward a brewer’s inquisitive nature. With low to moderatelevels of alpha acid, Helga is the perfect variety to give refined characters typical of European hops, to beer. Australian born variety Helga was bred in 1986 with the aim of offering similar brewing characteristics to Hallertau Mittelfreuh. A quiet achiever, Helga was grown on a limited basis for the better part of a decade before a surge in interest from craft brewers resulted in her finding a home in a broad range of craft beer styles.

Summer AU Alpha Acid 4.0-7.0% Pellet Hops
Origin: Australia. Summer™ hop brings a promise of subtle, light apricot and melon flavours in a number of beer styles. Brew Tips Low in alpha acid, brewers can be flexible with dosing when using this hop for flavour and aroma. Summer’s™ apricot and melon characters are more apparent when dry hopping. Hop Story Summer™ was one of the first shining lights from HPA’s efforts at breeding true aroma varieties (by European definition) suitable for Australian growing conditions. She was identified early as having all the textbook traits of a true aroma variety and was included in many fine beers. However, the sun started to shine on Summer™ when she was used in dry hopping, which brought out her distinctive apricot and stone fruit notes. There are so many new fruity hops out there that you could brew a beer with a simple base malt foundation and a little bit of bittering hops at the start of the boil to set up for a huge hop burst with many different varieties added at the end of the boil. Dry hop for a few days before bottling or kegging, this beer would be a fruity masterpiece. Drink it fresh and I don’t think there would be a better homebrew for hop heads.

Ella AU Alpha Acid 13.4-19.2% Pellet Hops
More subtle in character, Ella™ (previously known as Stella) packs less of an upfront punch than her big sister Galaxy™, but is no less of a star. The changing faces of Ella™ make her an intriguing hop to experiment with. In lower doses, Ella™ can display floral and subtle spice notes, such as star anise, which is best appreciated in lagers or pilsners. With larger additions or when dry hopping, Ella™ imparts distinct tropical flavours which can be used to offset robust malt and yeast characters in many styles. A high level of essential oil presents many options to brewers, who will be rewarded with enticing flavour combinations when varying doses are added to the mix. Ella’s™ was born in Victoria in 2001, her star quality was notable even as a seedling, so her brewing assessment was accelerated and she was unveiled to brewers for trials in 2007. Her early appearances revealed strong floral, noble hop character complemented with a delicious spicy finish. Making a great first impression, brewers couldn’t get enough of Ella™ and she was fast-tracked into commercial production. Ella™ is an intriguing hop to experiment with, showing you floral and subtle spice notes when dosed in smaller quantities which apply well in a variety of lagers. With increased aromatic additions and dry hopping, Ella™ imparts a distinct grapefruit and tropical flavour useful in heavier malt bills or highly hopped styles. With high levels of essential oils, Ella™ presents a number of options; pare her back to add depth, but let her loose and you’ll get a big tropical flavour to your beers.

Warrior US Alpha Acid 15.0-17.0% Pellet Hops
Warrior Hops is a product from Yakima Chief Ranches in Washington State in the Northwest United States. Warrior's pedigree and release date must be privileged information, unfortunately, but its hops character and demand speaks for itself. Warrior is a bold hops variety, and a sign of the times. Warrior Hops is a strong bittering variety. With an alpha acid content of 15.0%-17.0%, Warrior is going to be an excellent bite to any beer needing a strong bitter foundation, especially considering its relatively low co-humulone content at 22.0%-26.0%. As you might expect, this variety comes with a high myrcene oil content. The rest of the oils are in moderate range, with farnesene barely hitting the radar. Warrior Hops is known for its mild aroma. You will mostly find it in strong ales....and although predominately used in American Craft breweries, Warrior can be found in commercial recipes around this little beer lovers planet. Warrior Hops is a vigorous growing hops variety and churns out 2400-2600 lbs/acre. Bam! The medium size cones produce bright yellow lupulin, and are harvested mid-season. Nugget, Columbus, as well as Hallertauer Magnum Hops can be used as substitutes, but you shouldn't have any trouble finding Warrior (hopefully). Bring out the Warrior in your beers and join the bite.

Tettnang EU Alpha Acid 2.5-5.5% Pellet Hops
Tettnanger Hops gets its name from the Tettnang area of Germany. Tettnang is a famous hops growing region (and town) near the southern border, near Lake Bodensee, which also borders Austria and Switzerland. You can see the Tettnanger hop fields from space around Tettnang. This hops variety is grown in other countries including Switzerland, the United States, as well as Australia, and hops grown from this area in Germany will likely be marked as Tettnang Tettnanger. This traditional hops is a dual purpose hops and is used for both its bitterness and aroma. It closely resembles Saaz Hops which is largely grown in the Czech Republic and the essential oil make up is very similar. Myrcene, humulene, and caryophyllene oils are all within the moderate range. While farnesene oil is highly elevated, ranging up to 34% which is some of the highest of any variety. Yes! The result is a highly regarded aroma, of the noble character, that is spicy yet floral. Tettnanger Hops is on the low side of the global yield scale, but moderate compared to some other German varieties. 1000-1400 lbs/acre of medium size, fairly compact cones can be harvested early to mid season after a moderately vigorous growing cycle. Tettnanger Hops is susceptible to German Wilt, yet tolerant to Downy Mildew. The German Tettnanger variety is one versatile hops, and has shaped character of German Pilsners and Lagers over centuries. It is also found many other beers styles from commercial brewers including Hefeweizen, Pale Ale, Kolsch, Bocks, and many more

Target EU Alpha Acid 8.0-13.0% Pellet Hops
Target Hops was bred at the Hop Research Institute at Wye College in England and was released in 1992, Target is a cross between the following: (Northern Brewer X Downy Mildew resistant male) X (Eastwell Golding X USDA 64103M) where USDA 64103M is resistant to both Powdery Mildew and Verticillium Wilt. Target Hops is a cousin to Challenger Hops, although they have different characteristics. Target Hops is widely used in the UK for both its bittering and aromatic qualities. The alpha acid content ranges from 8.0%-12.5% and imparts a clean bitterness. Target is commonly used for kettle additions in the brewing process for its smooth bite, and also for early aroma contributions. Target has created a following in breweries for its aroma that comes from the oil composition. Myrcene oil content is high in Target, while the other oils are in moderate range. Farnesene is only present in trace amounts. Target Hops gained some of the disease resistance from its heritage, including tolerance to Powdery Mildew and Verticillium Wilt. Target's yield is moderate to high for an English variety and ranges from 1350-1800 lbs/acre. The small plump compact cones are harvested late in the season after a vigorous growing cycle. As mentioned, Target Hops is most widely used in the U.K. but can be found elsewhere, including on the shelves ready for your next beer batch. The storage stability for Target is low, however, so look for fresh whole hops, or pellets. Aroma: Specific aroma descriptors include fresh green sage, spicy and peppery, and hints of citrus marmalade.

It was released for commercial production in 1989. Its oil profile contributes to a wonderfully earthy and grassy character atop a nose of nectar fruits. It is best used late in the boil, or for dry hopping. This utilization is preferential since its humulene content has been noted to dissipate rapidly when heated. Usage: Aroma. True to its name, Hallertauer Tradition is right at home in traditional expressions of German styles: pale and dark Munich-style lagers, Oktoberfest, Bock, Weissbier. It does very well in Kolsch and Altbier, and alone or in a blend for classic Pilsners. Aroma & Flavor Characteristics: Hallertauer Tradition displays a classic Hallertau character of strong herbal and spice components with an underpinning of bright fruit. Complex balance of classic “hoppy” character with floral, earthy, and new-mown hay notes.

Spalt Select Hops was bred as a cross between Spalt and Hallertauer Mittlefrüh by the Hops Research Institute in Hull, Germany. Its origination is circa late 80's and was aimed to replace the Spalt variety by providing stronger growing characteristics, which is evident in its yield. Spalt Select is classified with the noble varieties due to its low co-humulone content. It has a low alpha acid rating at 3.5%-5.5% and is an aromatic variety.
