The geology in our area is very complex, called the Armorican Massif, where the mother rock consists of metamorphic and magmatic rocks (slate, spilite, poudingues and carbon) at different expositions. This soils variety allows the Chenin to express itself in many different ways. Such as a Cameleon, it absorbs the mineral caracteristics of the terroir and bring us unique expressions. We feel lucky to have six different terroirs in Savennières and Anjou from which we make as many different dry whites plus two to three sweet Chenin in the Coteaux du Layon and the prestigious appellation Quarts de Chaume. Chenin absorbs and expresses these terroirs very well. Our vines are farmed organically certified by Qualité France. In order for us to talk about the terroir it is imperative to have a soil that is alive hence, working organically. During vinification, the yeasts used are indigenous, there are no additives besides minimal sulphur and of course no chaptalisation. Aging is between one and two years in mostly three to four wines French oak with a capacity of 225l or 600l or in 6000l. This is a magnificent coteau with a southern exposure and slopes between 30 and 70%. This coteau was planted before 1940 and then abandoned during the war as it was too steep to work on. We bought 70 different plots from 25 different owners over a 3 year period for a surface of 7 hectares of which 5 is plantable. In 2000 with the help of 2 American friends we planted 2.70 hectares of Chenin with a density of 7000 plants per hectare. This is an amazing terroir for the wines but they are not alone, this zone is very rich with fauna and flora and is classified a natural reserve from the region of the Coteaux du pont Barré.
