And yet other notes come to the fore: small wild berries in the countryside on hot summer afternoons… Lively fruit is contained by the wine’s precise structure, which gains in fullness and ends with mellow notes that stay on the palate and resound in the memory for a long time. The Bollinger House also makes magnificent red wines, such as the legendary Côte aux Enfants, in Aÿ. Since Bollinger Rosé was created in 2008, the Poirier Saint-Pierre and Montboeuf plots, in Verzenay, are worked in the same style as the Côte aux Enfants plot to complete the production… Because only great wines make great champagnes.Expert Reviews Rosé NV was a much celebrated addition to the Bollinger family in 2008, albeit only on a tiny scale (just five percent of the volume of Special Cuvée). It’s based on the Special Cuvée, to which just five percent of still red wine from the vintage of the base wine is added. From pinot noir sourced from the grand cru village of Verzenay, matured in barrel for twelve months, this is a particularly strong, concentrated, dark-coloured red wine with a robust tannin structure. The intention is to showcase the red winemaking expertise of the house, using the addition method to provide precise control of flavour and colour. Despite the resilience instilled by partial barrel fermentation, this rosé tends to move relatively quickly in its evolution and I have not tasted a bottle in Australia that matches its gorgeous freshness in its home land. Look for the youngest disgorgement you can find (the year of labelling is the first two digits of the labelling code). Based on the 2007 and 2006 vintages, this year’s disgorgement is even finer than last year. A very pretty pale salmon hue with a gorgeously elegant bouquet of rose petals and strawberry hull. The palate maintains the utmost poise at every moment, with rose petal fragrance, strawberry hull delicacy, gliding delightfully into incredibly mineral structure and linear persistence. Ten grams per litre of sweetness completely disappears. Elegance, restraint and finesse completely transcend its recipe.Rating 96 - Tyson Stelzer, The Champagne Guide 2012 -2013Winery Tasting Notes Demonstrating unique blending and red-winemaking skills: a true alchemy, a very technical wine. The blend 62% Pinot Noir, 24% Chardonnay, 14% Meunier - is an assemblage of current harvests and reserve wines from Grands and Premiers Crus of La Montagne de Reims and La Côte des Blancs. This is completed with a tiny proportion of Pinot Noir vinified as red wine from Bollinger’s Grand Cru vineyards in the Cote d’Ay and Verzenay. Appearance Bronze Medal - Medal Medal tones combined with the intense depth of a great red wine. Aroma The nobility of red berries: hints of red currant, cherry and wild strawberry A spicy touch, not unlike Special Cuvée. Palate A subtle combination of structure, length and vivacity, with a tannic finish due to the adjunction of red wine Bubbles as fine as velvet Flavours of wild berries. Food Matching Crayfish, lobster, one-side cooked salmon. Japanese cuisine or not-so-spicy Asian cuisine. Fruit based dessert: fruit soup, strawberry tart, raspberries. With its intimate and unusual flavours, Bollinger Rosé can be served for afternoon tea, Bollinger-style. It is also perfect for a picnic on a summer afternoon, as a pre-dinner drink or served with a fruity and tart dessert. To fully appreciate its unique style, bouquet and aromas, Bollinger Rosé is best served between 10 and 12°C.
